Avocado, Spinach & Poached Egg Sandwich

🥪 Ingredients
1 slice of good-quality bread (sourdough or brioche works best)
½ ripe avocado
A handful of fresh spinach
1 fresh egg
Salt, to taste
Black pepper, to taste
Chili flakes (optional)
White vinegar (for poaching water)
👩🍳 Instructions
1. Toast the bread
Lightly toast the bread until golden and crisp. Set aside.
2. Prepare the avocado
Mash the avocado with a fork until creamy but still slightly chunky. Season with salt and a pinch of black pepper.
3. Wilt the spinach
Quickly sauté the spinach in a dry pan over medium heat just until wilted. Remove from heat and season lightly with salt.
4. Poach the egg
Bring a pot of water to a gentle simmer. Add a small splash of vinegar. Crack the egg into a small bowl, swirl the water, and gently slide the egg in. Poach for about 2½–3 minutes until the white is set and the yolk remains runny.
5. Assemble
Spread the mashed avocado onto the toasted bread. Add the wilted spinach on top.
6. Finish with the egg
Carefully place the poached egg on top. Season with salt, pepper, and optional chili flakes.
7. Serve immediately
Cut open and enjoy the flowing yolk.
