Roasted Tomato, Burrata & Avocado Sandwich

🥪 Ingredients

  • 2 slices of bread (sourdough, ciabatta, or sandwich bread)

  • 1 ripe avocado

  • 1 ball of fresh burrata

  • 6–8 cherry tomatoes (or small cocktail tomatoes)

  • 1–2 tbsp olive oil

  • Salt & black pepper

  • Balsamic glaze (for drizzling)

👩‍🍳 Instructions

1. Roast the tomatoes

Preheat your oven to 180–200°C (350–400°F). Slice the cherry tomatoes in half and place them on a baking tray. Drizzle with olive oil and season with salt & black pepper. Roast for 10–15 minutes, until soft, juicy, and lightly caramelized.

2. Toast the bread

Toast both slices of bread in a pan or toaster until golden and crisp.

3. Prepare the avocado

Cut the avocado in half, remove the pit, and scoop out the flesh. Mash lightly with a fork or slice it thinly (your choice). Season with salt & pepper.

4. Assemble the sandwich

Spread or layer the avocado on the toasted bread. Add the roasted tomatoes on top. Tear the burrata into soft chunks and place it over the tomatoes.

5. Finish with balsamic glaze

Drizzle a thin line of balsamic glaze over the burrata.

6. Serve

Serve open-faced or close the sandwich. Best enjoyed immediately while the tomatoes are warm and the burrata is creamy.
