1. Toast the bread
Brush the white bread lightly with olive oil and toast until golden and crispy.
2. Prepare the chimichurri
Add fresh chili, garlic, parsley, olive oil, lime juice, and a pinch of salt to a mortar.
3. Muddle
Grind the ingredients until a coarse, vibrant chimichurri forms.
4. Make chimichurri mayo
Mix a portion of the chimichurri with mayonnaise until smooth and creamy.
5. Cook the steak
Season the ribeye steak and sear in a hot pan until medium doneness.
6. Slice
Let the steak rest briefly, then slice thinly against the grain.
