This crispy onion rings recipe delivers the perfect crunch with a light sparkling water batter and a golden panko crust. Double breading makes them extra crispy on the outside while the onions stay tender inside. Perfect as a snack, side dish, or party appetizer.

For the onion rings:

  • 2 large onions

  • 1 cup flour (130–150 g)

  • 1 tbsp cornstarch

  • 250 ml cold sparkling water (mineral water or soda water)

For coating:

  • 1½ cups panko breadcrumbs

  • 1 tsp garlic powder

  • 1 tsp dried parsley

  • Optional: crushed crispy fried onions for extra flavor

For frying:

  • Vegetable oil for deep frying

  1. Peel the onions and cut them into thick rings. Separate the rings carefully.

  1. In a bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, chili powder, salt, and pepper.

  1. Slowly whisk in the cold sparkling water until a smooth batter forms. The carbonation helps create a lighter, crispier coating.

  1. In another bowl, mix panko breadcrumbs with garlic powder and dried parsley.

  1. Lightly coat the onion rings first in plain flour.

  1. Dip them into the sparkling water batter.

  1. Coat them with the panko breadcrumb mixture.

  1. For extra crunch, repeat the batter and panko coating once more (double breading).

  1. Heat oil in a deep pan to about 175–180°C (350°F).

  1. Fry the onion rings in batches for about 2–3 minutes until golden brown and crispy.

  1. Remove and place on paper towels to drain excess oil.

  1. Serve immediately while hot and crunchy.
