Skyr Pizza Rounds

Ingredients
Dough
400 g Tipo 00 flour
500 g Skyr
7 g fresh yeast (or 14 g dry yeast)
1 tsp salt
1 tbsp olive oil
Topping
San Marzano tomatoes (puréed or canned)
Mozzarella
Variant 1: Margherita (tomato & mozzarella only)
Variant 2: Spicy – with hot salami
Variant 3: Tonno e Cipolla – tuna & onion
Instructions
1. Prepare the dough
Mix flour, salt, and yeast. Add Skyr and olive oil, then knead for 8–10 minutes until smooth.
2. Let it rise
Cover the dough in a bowl and let rest for about 1 hour, until doubled in size.
3. Preheat the oven
Preheat to 200 °C (390 °F) top/bottom heat, heat up baking tray or pizza stone as well.
4. Shape the dough
Roll out thinly and dust lightly with flour. Use a round cutter to cut circles of approx. 10 cm diameter.
5. Add toppings
Spread with San Marzano tomatoes, top with mozzarella, and depending on the variant add salami or tuna & onion.
6. Bake
Bake for 8–12 minutes until the edges are crispy and the cheese golden.
7. Enjoy
Serve hot – best straight from the oven! 🍕
