Strawberry Tiramisu

🍓 Ingredients

  • 200 g ladyfinger biscuits

  • 250 g mascarpone

  • 3 eggs (separated)

  • 70 g sugar

  • 250 g fresh strawberries

  • Juice of ½ lemon

  • 1 tsp honey

  • Strawberry juice (for soaking)

  • Freeze-dried strawberries, finely ground (for topping)

👩‍🍳 Instructions

1. Prepare the strawberry purée
Wash and hull the fresh strawberries.
Blend them with lemon juice and honey until smooth. Set aside.

2. Prepare the egg mixture
Whisk the egg yolks with sugar until pale, thick and creamy.
Add mascarpone and mix until smooth.

3. Whip the egg whites
In a clean bowl, whip the egg whites until stiff peaks form.
Gently fold them into the mascarpone mixture using a spatula.
Do this slowly to keep the cream light and airy.

4.  Soak the ladyfingers
Lightly drizzle or dip the ladyfingers with strawberry juice
(do not soak too long to avoid sogginess).

5. Layer the tiramisu

  • First layer: ladyfingers

  • Second layer: strawberry purée

  • Third layer: mascarpone cream

Repeat the layers if desired.

6. Finish & chill
Finish with a layer of cream.
Dust generously with finely ground freeze-dried strawberries.

7. Rest time
Refrigerate for at least 3–4 hours before serving for best texture and flavor.
